Welcome to Pilot Kitchen, located at 2 Havelock Rd #B1 04, Singapore 059763, where creativity flows without titles, where dishes evolve with the seasons, and where a team of young chefs is reshaping the culture of fine dining from the ground up.

No Head Chef, Just a Shared Mission

Unlike traditional restaurants ruled by a single executive chef, Pilot Kitchen is run by a collaborative team of chefs in their twenties. There is no hierarchy, no barking orders, no rigid roles. Each member, from former hawkers to private dining chefs, brings a unique story, skill, and flavor to the plate.

They rotate responsibilities, support each other’s experiments, and share the stage equally. The result is a kitchen that feels more like a creative studio than a pressure cooker. It is a quiet revolution in an industry long defined by heat, intensity, and sometimes even hostility.

Where Passion Tastes Like Comfort

Their food is confident yet comforting, rooted in a love for bold flavors and nostalgic warmth. The Duck Menchikatsu with XO sauce offers a crispy and savory indulgence that lingers pleasantly on the palate. At the same time, the pillowy Homemade Milk Bun with house-made flavored butter delivers a soft, buttery joy. Bigger plates like the Peri Chicken bring a smoky heat balanced with tenderness, and for dessert, the Butter Cake provides the perfect sweet finish.

Each dish captures the spirit of Pilot Kitchen perfectly—a balance of comforting familiarity and fearless creativity. The menu changes every two months, not just to stay fresh but to reflect the team’s continuous growth. The open kitchen layout lets diners watch the chefs cook, laugh, and improvise in real time.

This is casual fine dining with heart. It is fine dining that doesn’t ask you to dress up, but still manages to stir your soul.


Meet the Dreamers Behind the Stove

The team includes Bryan Wai, who started Pilot Kitchen as a private dining experiment. Then came Sean Koh, who wanted out of the strict systems of commercial kitchens. Sebastian Kok joined after connecting on Instagram, bringing his hawker grit and heart. And there is Phang Wei Jun, the youngest of the crew, who joined while awaiting National Service.

They are mentored by Wong Jing Kai of Scaled by Ah Hua Kelong, who believed in their dream and backed them with guidance and trust. Together, they created a space that celebrates skill over ego and progress over perfection.
